Food on Fridays with Ann
Great for a special breakfast or brunch, baked oatmeal is delicious served plain or with a few spoonfuls of yogurt.Here’s the version I’ve made:Baked Oatmeal
- 3 C. oatmeal
- 1/2 to 1 C. brown sugar
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 C. applesauce
- 1 tsp. vanilla
- 2 eggs
- 1 C milk (rice or soy milk is fine)
- 1/2 to 1 C. raisins or blueberries (but blueberries are way better)
Preheat oven to 350 degrees. Mix the dry ingredients in one bowl. Mix the wet ingredients in another bowl. Stir the wet and dry ingredients together and add the raisins or blueberries. Spread in a 9×9 pan, lightly sprayed with nonstick spray. Bake 20-30 minutes. Serve as-is, or top with yogurt or some sort of milk.

Oooh, this looks delicious! I have a peanut butter version, but I’m going to have to try this one. My kids LOVE blueberries!

We love baked oatmeal. It’s so easy and you can make changes according to taste and what’s in your pantry: dried fruit, nuts, coconut, cinnamon, vanilla, maple flavor…there are endless combinations.

Ahh..this looks lovely baked oatmeals with the blue berries, though not a huge fan of oatmeal, but I would like to try this.

Oatmeal is one of my favorite simple breakfast treats. Your version sounds and looks delicious! My contribution today does not have a recipe with it, but it is a story (blush) about my tiny apple tree.

I have always struggled with traditional oatmeal – I want to like it, but I just can’t. However,your baked recipe with the blueberries just looks so good!
