When the weather turns cold, I start to crave potatoes.So I start grating or cubing russets, Yukon Gold and sweet potatoes to fry up in some olive oil.When I’m in a hurry, I put a little water in the bottom of the skillet, stick the big lid on it, and let the potatoes steam a little while to cook through. Then I set the lid aside so that the potatoes brown.Depending on what I have in the fridge, I might add some stuff.Like veggies.I mix them in after the potatoes are getting pretty soft.Then I remember that my friend Mike, the organic farmer, pleaded with me to eat greens. “You have got to get greens in your diet,” he said. “Please, please start eating greens!”So I grab some greens to toss in.Spinach doesn’t take long to cook, so I toss it in toward the end.And then, when everything is cooked, browned, wilty, or whatever it’s supposed to look like, I dish it up.Rather carelessly, as you can see.Never mind the stray spinach leaf and sweet potato tidbit. My goal is rarely presentation. Though I did have the presence of mind to chronicle my humble potato prep to share with you today, I mostly just want to eat it.So that’s me. I crave potatoes in colder weather, whether fried, baked, mashed, or as thickeners in the soups that will start simmering.How about you? I always find myself craving mashed potato as the seasons change. That and winter squash (although not ever together that I can recall). By the time Spring rolls around, my husband is absolutely sick of potatoes and winter squash!

Ooh! That sounds delicious! I can taste and smell the potatoes browning in the olive oil. Best taste ever!
My tastes definitely change with the cooler weather to more filling, hearty dishes. Things cooked in the crock pot or in the oven.

I would love that dish, Ann. Great idea to add the spinach or other greens. Hubby would be fine with the dish UNTIL I added the greens. Don’t think I’ll ever convince him to eat cooked greens.
I’ve been doing a pumpkin series all week, with one post on making your own pumpkin puree (my favorite stuff although sometimes I use cushaw squash in place of pumpkin), so I had a hard time choosing a recipe. But, the one that’s gotten the most attention this week has been my pumpkin pie smoothie with honey cinnamon whipped cream. 🙂

Wow! Those potatoes look great! I add peppers and onions (sometimes corn) to mine! I never would have thought to add the spinach (or the mushrooms)!
I could eat potatoes with every meal, I love them! Thanks for giving me a new idea to switch them up a bit!

I eat a lot more during the cold months than the warm. And my figure shows it! :-/ hehe I actually crave fresh baked chocolate chip cookies during winter.

What a wonderful new idea for stir fry to mix the variety of potatoes, (never thought of mixing sweet potatoes) and at first glance of your photo I thought they were carrots. This recipe would go over well at our house !! I would add the mushrooms, bell peppers and why not the spinach!
